February Weekends Breakfast

These are the breakfast I made during weekends in the month of February...

Toast white bread, hashbrown, crisp fried bacon and poached egg

Yes, I finally managed to make a not too bad looking poached egg LOL
Through my many times of experiments, what seems important is to pour the egg real gently into the swirling water, the pot is to be on medium low fire where the water simmers, and not to swirl the water too vigorously

Cheese omelette
Sprinkle grated cheddar in the centre of the omelette when half cooked, fold the left and right side towards the centre, cooked using Happy Call pan

Fried ham, toasted bun with cheese and scrambled egg

Banana cinnamon french toast

Too lazy to caramelize the banana, which I quite regretted :)

January Weekends Breakfast

Remember in one of my earlier post, I ever mentioned that my weekday breakfast is usually a lonely one.. And I mentioned that I will make more efforts to make our family weekend breakfast varies?
Well, in the first month of this new year, I managed to make a little difference in our weekend breakfast at home together :)
They were simple, but indeed made our weekend morning more exciting :)

So here they are, hope it can be a help for those clueless of what to eat on lazy weekend morning :)
Oh, and thanks to my family whom has been (im)patiently waiting for me to take some snaps first on their breakfast. Some taken with my handphone camera, when I myself was too lazy to take out my real camera, so pardon the quality LOL

My favorite breakfast of the month... Toasted country bread with bacon, avocado, cheese and sunny side up *slurp*

I saw this somewhere I couldn't remember. Thanks for the idea, whoever you are :)

What you need:

country bread loaf (store bought)
mashed ripe avocado
back bacon, fried til crisp
egg, make sunny side up
grated cheddar cheese
salt and black pepper

Method:
  1. Cut loaf as preferred, toast with grated cheese sprinkled on top
  2. Spoon mashed avocado on top, spread evenly, top with bacon and sunny side up
  3. Sprinkle with salt and black pepper
That's it! :)

Blueberry pancake, I used Morinaga pancake mix, prepare as directed and top with fresh blueberries. Serve with maple syrup

Simple french toast

What you need:

5 slices of white bread - halved
3 eggs
1 tsp vanilla extract
a big pinch of salt

150ml milk
butter
maple syrup

  2. Heat butter on a pan
  3. Dip each bread into the egg mixture and pan fry approx 30seconds for each side
  4. Eat with maple syrup
Supposedly half boiled egg but turned out three quarter boiled egg LOL with hash brown bought from frozen section in the supermarket :)

Tomato fritata using Happy Call pan (inspired by Veronica from Peng's Kitchen) and toast with honey

For tomato fritata using Happy Call pan:

What you need:

3 eggs, lightly beaten with a big pinch of salt
tomato slice thinly and halve
a little butter
black pepper

Method:
  1. Grease pan with a little butter
  2. Pour the egg mixture on the pan and cook for half a minute
  3. Arrange tomato slices on top and let it cook for a few minutes (close but no lock)
  4. Sprinkle with black pepper and serve

Toasted, flattened and rolled white bread with banana, chocolate rice and grated cheese filling. Served with Hersheys chocolate sauce

Prata rolled with sausage and cheese filling. Served with tomato ketchup and chilli sauce

Quite a breakfast, huh?
Let's hope I will get many more inspiration for weekend breakfast and most importantly won't be too lazy to make LOL

THB #13 - Dark Chocolate Almond Cake (Happy Call)

Two years is fast! LBT turned two on Friday, hence the challenge for this month, any bake for celebration :)
So I chose to bake this yummy chocolate cake, decorated with sugar cookies which happened to be requested by Ian :)

I baked this yummy chocolaty cake in conjunction with the 13th bake for The Home Bakers, a recipe chosen by Jocelyn from Riceball Eats, from the book  "Coffee Cakes" by Lou Seibert Pappas
This time I baked using Happy Call pan and I was satisfied with the outcome
Soft and chocolaty, tasty too. A bit crumbly, perhaps cos I overbaked it a little
Very similar to brownies, but not the fudgy type
Very well received by my family, including the kids :)

I had only chopped almonds which I blended briefly, so I still could taste a little crunch from the almond bits :)
I used bittersweet chocolate and strong brewed coffee. I guess the coffee was a bit too strong I felt the cake was not sweet enough. Since I love the slight coffee taste in the cake, I would still use the same kind of brewed coffee and used semi sweet chocolate instead to get the right sweetness to my liking

Here for presentation I sliced the cake to bite size small squares
It's surprisingly pleasant to munch the cake together with the cookie :)

Please view Jocelyn's site to view the full recipe for the chocolate cake
As for the sugar cookies, I used the same recipe I made before from Rima

So glad I finally managed to find time to participate in The Home Bakers event this time, after I missed out the previous bake :)
This event is hosted by Joyce of Kitchen Flavours
Please visit HERE if you're interested in joining the fun :)

And to LBT, happy 2nd birthday! So glad to be able to share baking experiences together with the ever growing number of members, many turn to best friends :)
Many more years to come. Cheers!

Steamed Marie Biscuit Cake With Chocolate Chips (Happy Call)

This cake is popular among Happy Call Fans Facebook group
There are two versions - baking and steaming, both using Happy Call pan
The recipe is slightly different between steaming and baking, simply because steamed version always produces cakes which are more moist, hence the lack of liquid ingredients in the recipe
Both recipes received 100% great reviews, and loking at the unique ingredient used - marie biscuits to replace flour, also how easy and quick to make this cake, made me decided to give it a try :)

I made the steamed version, and oh how true the comments I read about how good this cake is
It is so tasty, delicious and the texture is so moist, soft and fine! I love it and so is my family

Recipe is from Happy Call Experience and Recipe Sharing Facebook group

What you need:

150g softened butter (I used unsalted butter)
120g caster sugar
3 large eggs, lightly beaten
150g original Marie biscuits, crushed and processed into powder form
1/4 tsp baking powder
1/4 tsp salt (I added)
cocoa powder (I omit this and replaced with 3 handfuls of semi sweet chocolate chips)
  1. Prepare 2 cups of water in Happy Call pan and bring to boil
  2. Grease square 18 cm square pan, bottom and sides
  3. In a mixing bowl, beat sugar and butter til pale, light and fluffy (high speed)
  4. Reduce to low speed, add in eggs one at a time til well incorporated
  5. Add in salt, baking powder and Marie biscuits, mix well
  6. Fold in chocolate chips til evenly distributed
  7. Pour batter into the prepared pan, and put in Happy Call pan with the boiling water inside, steam medium low heat for 10 minutes
  8. Check the water in the pan, you may add a little more
  9. Reduce the fire to very low heat and continue to steam for another 30 minutes

Note:
The original recipe divided the batter into two, add cocoa powder into one part of the batter
Pour the plain batter into the pan first, followed by the chocolate batter and make marble effect with chopstick

This is actually my second try to make the cake
The first time was yesterday, I used the same recipe above which was meant for steaming method but I was so blur I baked it instead using Happy Call pan
The result was not too bad, actually, still tasted yummy, but it turned a little dry and hard the next day

I'll definitely find time to try to make the baked version again, using the other recipe supposedly for baking :)
For the steamed version, yes, definitely I will make it again - my kids enjoyed it so much, that's a motivation! :)

Homemade Muah Chee (Happy Call)

This simple yummy sweet chewy crunchy snack is DH's favorite
So glad I could make this, and it's surprisingly so simple using Happy Call pan :)

1 cup water
1/2 tsp sugar
2 tbsp shallot oil

Kahlua Snaps W/ Chocolate Chips Cream (Happy Call)

LBT challenge this month, something I never know of, never eat either, brandy snaps
But since I replaced brandy with kahlua, I renamed this sweet treat accordingly :)

To be honest, none of my family members liked this when it's just cooked, hard and too sweet
But the next day after kept in the fridge overnight, it turned soft even though it's still sweet
When it's soft, I didn't mind eating it but not more than two bites, it's way too sweet for my liking
Abby quite liked it, too, but couldn't eat much either
DH and Ian didn't even want to eat after their first try
The biggest fan and kept munching on this was my mum, followed by my sis
The usage of kahlua altered the taste to coffee candies like and my mum is a big fan of coffee candy, in fact she is a candy eater
While DH and I, including my kids dislike any kind of candies, perhaps some soft chewable candies occasionally but definitely those hard candies

I made this using Happy Call Pan, original recipe used oven
It's quite a challenge initially, after at least five attempts, I finally managed to make a better shape
I used individual muffin mould, put it upside down and arrange the snaps on top
Original recipe rolled the flat snaps with wooden rolling pin

Here's the recipe, shared by my LBT friends...

What you need:

120g butter
3 tbsp maple syrup (or golden syrup / honey)
70g plain flour
100g sugar
1 tsp vanilla extract (original recipe used ginger powder)
2 tbsp kahlua (original recipe used brandy / rum)
  1. Heat butter and maple syrup in a small pot til butter melts, off heat
  2. Add in flour, sugar, vanilla extract, and kahlua, keep stirring til mixed well, set aside for 15 minutes (the batter became thick and sticky)
  3. Heat pan (low heat), brush lightly with butter, scoop 1 tbsp of batter at the centre of the pan and observe
  4. The batter will slowly get wider and holes formed, and color turns golden brown
  5. Off heat and leave it on the pan for 30 seconds, lift up using wide spatula and transfer to the muffin mould (upside down)
  6. Shape accordingly and let cool, then remove the mould
For the filling, original recipe used whipped cream
I whipped dairy whipping cream and mixed with chocolate chips. The cream somehow turned a little lumpy - perhaps I overbeat, but never mind, it still tastes good :)

Another challenge, great experience, but I don't think these snaps will be in my family favorite list...well, perhaps it will in my mum's favorite list instead :)

Indonesian Grilled Fish Fillet (Happy Call) (Barefoot Contessa)

I came across this recipe when I was browsing for Ina Garten's recipes in yummly.com
I was curious how the taste is cos it's stated Indonesian but when I saw the seasonings, I was not very certain it would be the Indonesian taste :)

I prepared this dish for dinner this evening, it's quite nice, not the authentic style, but it's nice in its own way
However. I found it too salty
The next time I make this, I will omit the salt

What you need:
(modified to suit my preference and portion)

500g fish fillet (I used premium sutchi fillet)

Marinade:
40ml soya sauce
30ml canola oil
1 tsp grated lemon zest
30ml lemon juice
10g finely minced ginger
2 garlic, finely minced
1 tbsp dijon mustard
dark sweet soya sauce to brush during grilling
  1. Mix the marinade ingredients and put fish in it and marinade for minimum of 4 hours, overnight will be the best
  2. Prepare Happy Call pan, brush a little oil on top and over medium low heat, grill the marinated fish around 5 minutes each side / til cooked, brush each side with dark sweet soya sauce
  3. Place on serving plate, and cover with aluminium foil for 10 minutes before serving
Nice to eat with hot fluffy rice :)

I'm linking this to Cook Like A Star blog hop event, hosted by Zoe, featuring Barefoot Contessa as the celebrity chef for the month of May

Indonesian Style Grilled Chicken (Ayam Bekakak) (Happy Call) & Stir Fry Beansprout With Silver Fish

Indonesian has many kinds of grilled chicken, some are nice, some are not so nice
It all depends on the marinade mixture, and also the cooking process
One important factor also how long the chicken is marinated

This grilled chicken can't be considered as nice, that's not exactly how it should be described, cos it tasted fabulous!
Definitely will make this again :)

I'm not sure why they named it ayam (meaning chicken) bekakak
What is bekakak? I'm not sure and I haven't asked any of my Indonesian friend so far
Maybe I should, but for now, let's just celebrate how tasty this dish is :)

What you need:

1 chicken, split the back, crushed lightly to flatten it
2 lemongrass stick, crushed lightly
2 bay leaves
2cm blue ginger, crushed lightly
1 tbsp tamarind, mixed with 2 tbsp water, mixed and discard the seeds
2 lime leaves
5 tbsp dark sweet soya sauce (kecap manis)
500ml water
3 tbsp cooking oil

Seasonings:
6 shallots
4 cloves of garlic
2cm old ginger
2cm yellow ginger
1 tsp coriander seeds
1 tbsp sugar
  1. Put all seasonings in food processor and blend til smooth
  2. Heat oil on frying pan, sautee the blended seasonings til fragrant
  3. Add in lemongrass, bay leaves, lime leaves, blue ginger and cook til fragrant
  4. Add in chicken, cook til chicken changed color
  5. Add in water, kecap manis, cook til seasonings thickened and water lessened, turn to the other side ocassionally
  6. Grill in the happy call pan over medium low heat, flip the pan til both sides golden brown
  7. Each time flipping the pan, brush more seasonings
Eat with chilli paste

To make chilli paste:
4 large red chillies, discard seeds and cut small
4 shallots, cut small
2 tsp prawn paste (belachan)
salt, sugar
  1. Put all ingredients in food processor, blend til smooth
  2. Heat a little oil on frying pan, fry the blended ingredients til boiling
  3. Off heat
Another dish which you won't be satisfied with only 1 bowl of rice! :)

And this is the companion:

What you need:

100g silver fish
4 handful of beansprout, cleaned and rinsed
5 shallots, slice thinly
2 cloves of garlic, minced
2 large red chillies, discard the seeds and cut small
sugar, salt and cooking oil
  1. Wash silver fish well (to reduce the saltiness), and pat with kitchen towel
  2. Heat a little oil on frying pan, fry silver fish til crispy, golden in color, drain and set aside
  3. Using the same pan, add a little bit more oil, heat and sautee shallots and garlic til fragrant, add in chillies, and mix well
  4. Add in beansprout, mix well til well cooked, add in silver fish, mix well
  5. Add sugar and a little salt (you don't have to add salt if you feel it's salty enough with the silver fish), mix well
  6. Off heat
Simple but it made a great companion to the chicken :)

Honey Glazed Salmon (Happy Call) & Aglio Olio

Another great simple dish loved by me and DH
Still trying to make my kids love salmon
They'll eat any kind of fish deep fried / pan fried / steamed, but when comes to salmon, they'll say no no matter how it's cooked :(
I can't understand why they don't like a fish taste as nice as salmon... I adore salmon! :)
Anyway, I have done many things and is still doing anything to make them eating it, so far most of the time they eat salmon without knowing it LOL

Just like this dish I made...
They love pasta so much, so this time I was thinking to "hide" the salmon in the pasta. It worked :)
I made aglio olio pasta, one of pasta the whole family love, with honey glazed pan fried salmon using Happy Call pan

Here's the recipe for the salmon, it's from Martha Stewart site
I skipped the coriander seeds this time

What you need:

4 salmon fillets, skinned
1/4 cup honey
5 tbsp soya sauce
2 tsp fresh lemon juice
2 tsp oil
  1. Mix well honey, soya sauce and lemon juice
  2. Brush fillet with the mixture and cook on medium low fire in Happy Call pan til golden brown
  3. Lower fire, flip the pan and cook the other side also, make sure it's cooked well
  4. Bring the remaining glaze to boil on medium fire til thickened approximately 1 minute and pour over the fish
And this is the recipe for aglio olio pasta...

What you need:

300g spaghetti, cook as directed til al dente
a handful of garlic, peeled and minced
1 tbsp chopped fresh parsley (I used dried parsley)
enough olive oil and garlic oil (ratio 3:1)
  1. On a wok, heat olive oil and garlic oil, sautee garlic til fragrant and color turned golden
  2. Add in parsley, mix well, cook til it's soft
  3. Add in spaghetti and mix well
  4. If you find it's dry, add more garlic oil
Note:
I usually cook aglio olio with cut red chillies and chopped bacon
I will pan fry the bacon with a little oil til crisp
Then it will be added together with parsley and chillies

This time I skipped chillies so it wouldn't be too spicy for the kids
And I didn't use bacon since there's salmon as the companion for the pasta already, healthier choice :)
But to be honest, without chillies and bacon, I felt the pasta a little too plain, even with the salmon :)

Arrange pasta on a serving plate and put the salmon nicely on top, yum! :)

Btw, I found a very useful information and tips about aglio olio here that you may read :)

Grilled Stuffed Rice In Banana Leaves (Nasi Bakar) (Happy Call)

Very well loved by Indonesians
This authentic Indonesian dish is basically rice cooked in coconut milk wrapped in banana leaves with some fillings at the centre, and then grilled. Many different variations in terms of the filling
Mine used shredded chicken and silver fish, both cooked separately before being put in the rice. And I used my Happy Call pan to do the grilling :)
The fragrant from banana leaves makes the already yummy rice tasted even better, adding with the yummy filling, this dish doesn't need anything else, perhaps some spicy chilli paste :)

The picture below is the two fillings...

Recipe is from my mum...

What you need:

For the rice:
2 cups rice
3 bay leaves, rinsed
a stalk of lemongrass
coconut milk (I used 100ml Kara coconut milk)
salt, water

I cooked the rice in my rice cooker, mix all ingredients in it til cooked
(adjust the quantity of water according to your preference, not too soft, the best is the consistency of fried rice)

For the shredded chicken:
400g chicken breasts
5 cloves of garlic. minced
3 shallots, sliced thinly
1 thumb size  kaemferia galanga (in Indonesian: kencur)
2 bay leaves
75ml coconut milk (Kara)
1/2 tsp ground coriander
salt, pepper, sugar, sweet dark soya sauce (kecap manis)
a little oil
  1. Boil a pot of water with the chicken, bring to boil, discard the residue, simmer approximately 1 hour til chicken softened, after that scoop out the chicken from the stock and let cool
  2. After cooled, shred the chicken
  3. Chop garlic, shallots and kencur and then blend til forms smooth paste
  4. Add in shredded chicken, add in a little stock (approx 3 tbsp)
  5. Add in salt, pepper, sugar, coriander and kecap manis, mix well
  6. If it's too dry, you may add a little oil and keep stirring
For the silver fish:
100g silver fish, fry til crispy
3 shallots, sliced thinly
2 large red chillies, sliced thinly
sweet dark soya sauce (kecap manis), salt, sugar, water, a little oil
  1. Sautee shallots and chillies with oil on hot frying pan, add in kecap manis, salt, sugar, water and bring to boil, let simmer in medium fire til the mixture thickened
  2. Add in fried silver fish, stir til well combined
Topping:
Mix coconut milk, water and salt in a pot, bring to boil, stir continuously til the mixture slightly thickened

To assemble:
Cut banana leaves according to the preferred size (rectangle shape)
Spread rice on the leaf (the centre part), top it up with both fillings, top up with more rice, covering the filling
Pour 1-2 tbsp of topping and wrap the leaf
Secure each end with toothpick

Arrange the wrapped rice on Happy Call pan and grill til the leaves turned brown both sides

Pretty complicated and time consuming procedure but it's really worth the effort! :)

Apple Upside Down Cake (Happy Call)

My second experience with Happy Call double sided pan...this time is baking cake yum... :)
As an apple cinnamon lover, I was literally drooling when I saw this recipe, hence I chose this, with slight modification :)

The texture is soft, more like steamed cake.. The caramelized apple raisins on top remained juicy, really yummy :)

This how it looked like just after cooked... I guess I have used too much apples... no complaint though LOL

What you need:

For the cake:
100g cake flour
80g plain flour
3 tsp baking powder
4 large eggs (60g each)
90g caster sugar
1/2 tsp vanilla extract
grated rind of 1 lemon
60ml melted unsalted butter
60ml canola oil

For the caramel apples:
75g unsalted butter
150g packed brown sugar
75ml water
5 medium granny smith green apples, peeled, cored and cut
1 1/2 tbsp lemon juice
1 tsp cinnamon powder
150g golden raisins, coat with flour

To make caramel apples:
  1. Cut apples 0.5cm thick, lightly marinate with lemon juice and cinnamon powder, set aside
  2. Simmer butter and brown sugar over low heat in HCP until sugar dissolved and mixture begins to bubble. Stir in marinated apples, water and continue to simmer over low heat for 5minutes or until apples slightly soft (close but do not lock)
  3. When done, off hear, arrange apples and half of golden raisins as close as possible without too much gap in between. Set aside and prepare the cake batter
To make cake batter:
  1. Sieve together cake flour, plain flour and baking powder, set aside
  2. Whisk eggs, sugar, vanilla til well mixed (around 1minute) til slightly pale, whisk in melted butter, oil, and mixture of flour & baking powder
  3. Continue  to stir til flour incorporated into the batter (batter will be slightly like thick cream mixture), add in the remaining golden raisins
  4. Pour mixture over the prepared caramel apples, smooth the top and bake (lock the pan) over very low heat around 30minutes (usually steam comes out when cake is ready) or until skewer inserted and comes out clean (check after 20minutes of baking)
  5. Carefully flip the pan over and bake the top of the cake for another 5 minutes to brown the top before removing it from stove
Note:

My HCP is jumbo size and the original recipe used deeper pan which is one size smaller than jumbo. At first I wanted to increase the cake batter recipe to 1 1/2 but I changed my mind and stick to 1 recipe. but I added the caramelized apples as stated in the above recipe. I found it perfect, the cake was short but the ratio with the apple topping was just nice to my liking. I'll stick to this measurement the next time I bake this cake again :)

Another point to take note... To me, this cake tastes better the next day, the cake is more moist and the topping is more juicy

It's a perfect companion with a cuppa! :)

I'm posting this for:

Pan Fried Tilapia (Happy Call) & Stir Fry Mixed Vegetables

I have just purchased ochre jumbo Happy Call double sided pan, after much consideration for the past few weeks and seeing the craze going on among food bloggers

For my first experience, I chose fish since no doubt I love fish, but every encounter with fish on normal frying pan has never been pleasant at all
The smoke, the smell, the splattered oil, the super oily fried fish, the tedious stove cleaning...

I was very satisfied with the whole process and the result as well, really worth buying! :)

The fish was cut into two, marinated and fried, and the frying process has turned to a pleasant experience this time :)
Too bad one of the fish lost its precious tail LOL

I've done this recipe before, you may view it HERE

And this is the companion, stir fry mixed vegetables

What you need:

2 cloves of garlic, crushed
carrot, sliced
cabbage, cut
salt, pepper, light soya sauce, a little sugar, water, a little cooking oil

Heat oil on frying pan, sautee garlic til fragrant, add in carrot, followed by water, stir well
Add in salt, pepper, light soya sauce, sugar, lastly, cabbage
Simmer til vegetables turned soft enough (I like vegetables with crunch)
Adjust taste, off heat

Simple, yummy and nutritious meal, isn't it? :)

Homemade Chicken Nuggets

Ian is extremely delighted everytime seeing those frozen nuggets in the cold section everytime we visit supermarket
He is really into savoury stuff, will gobble whatever salty, tasty, deep fried - gosh!
Well, even though still fried, but if I can make myself, I at least I know whats going inside his lil tummy (no so little actually *grin*)

Saw Melly made this, so I gave it a try, and no regret, not only Ian loves it, the whole family do :)

Original recipe is from Cik Wiwik, another online friend of mine from LBT group

What you need:
(this is Melly's version which has been modified a little)

500g chicken breast - blend til smooth
1 big carrot - peel, cut small and pulse in the proccessor
2 eggs + 2 egg yolks - beaten (set aside the egg whites for coating later on)
approx 1 tbsp fried onion - pulse in the proccessor
1 tsp white pepper
1 tsp salt
1 tbsp fish sauce
1/4 tsp chicken stock powder
2 tbsp sago flour / tapioca starch
4 tbsp breadcrumbs (coarse Japanese type)
5 tbsp mayonnaise
2 eggs - beaten, mix with the remaining egg whites earlier on -> for coating
extra bread

Mix all ingredients til well incorporated, arrange on square pan (I used 18cm)
(Put a sheet of transparent heatproof plastic on the pan before pouring the batter - lightly oil the plastic)
Steam on high heat for 15minutes
Let cool - cut (I just cut  small rectangular shape cos my pan is small hence the thick batter, if you have bigger steamer, you can use bigger pan in order to get thinner batter spread and you can use cookies cutter to shape)
Dip each piece into beaten eggs, after that roll onto breadcrumbs til evenly coated
Keep in the freezer in the container for 30minutes
Deep fry til golden brown
Eat with bottled chilli sauce

This is great since I can add veggies in it - Ian hates greens, even though he doesn't mind carrots and corn as well as a little brocolli
This time I added carrots, next time I will add corn kernels :)

Really tasty treat - crunchy on the outside, soft and juicy inside!
So glad I can prepare a so called 'least preferred' dish by Health Promotion Board - right at home! :)

Btw, I made some with corn and fried "the healthy way" using Happy Call pan, it's as delicious :)

Crispy Baked Fish Fillets

I was still not feeling so good today, but definitely better - been resting for almost two full days!
Still in low mood to be in the kitchen, so I just made something simple, recipe from Little Corner Of Mine which has been in my to do list for quite sometime
(FYI, the list is super long! :P)

My kids don;t really fancy fish - unfortunately
Well we know that fish is good, especially for kids, I give them fish oil supplement but I still do my effort occassionally to make them eating more fish
Forget about steam / soup, they will definitely say no, but when I do other styles, they're more behaved :)
Deep fry or pan fry - taste nice but not a good idea to do this too often
Baked is still the best option for them but I am really lack of idea for baking fish which is not those spicy Indonesian style :)
Lucky I found this recipe - they love it to the bits!
Actually I think I didn't crush the cornflakes fine enough, but they still enjoyed it, I think cos they love cornflakes :)

What you need: (modified to my family's preference)

2 big fish fillets (I use sutchi fillets) - cut into big chunks
Marinate the fish with olive oil, garlic salt and all purpose seasonings
Keep in the regrigerator for around 3 hours

Crush cornflakes in sealed bag (not too fine), and mix with breadcrumbs
(I use Japanese breadcrumbs so I pulsed 2times to make it finer)
Put the mixture in a shallow plate

Spray the aluminum foil lined baking pan with canola oil spray. Take a piece of the fish and generously coat it with the cereals mixture. Pat it in and put extra coating on top of the fish fillet before baking. The olive oil used in marinating the fish pieces should be enough to make the coating stick

Bake in preheated oven 230degC for 10 minutes. Serve hot with baked potatoes - I bake the mini potatoes together with the fish, next time I'l prepare sour cream, chopped spring onion and bacon bits to eat with these little cuties :P)

Nice to do this version for lean chicken meat too, and perhaps next time I might try to replace olive oil with garlic oil :)
