Bacon and Cream Cheese Stuffed Jalapenos

I found this recipe on The Pioneer Woman's website last year and have been waiting for an excuse to make them. We were having friends over for an appetizer party and knew these would be a big hit with the guys. They were super easy to make and really, really, REALLY delicious. I decided to use lean, par cooked bacon and lower fat cream cheese to make them a little less fattening. They were a big success - everyone loved them.

Bacon and Cream Cheese Stuffed Jalapenos:

  • Fresh Jalapenos
  • Low fat cream cheese, softened
  • Lean bacon, sliced into thirds (par cooked or raw)
Preheat the oven to 375 degree.

Cut jalapenos in half, lengthwise. Carefully remove seeds and vein with a spoon. Smear each half with cream cheese then wrap with a piece of cut bacon. Secure by sticking toothpick through the middle.

Bake on a pan with a rack for 20-25 minutes. If the bacon doesn't look brown enough after 20-25 minutes then turn on the broiler and finish cooking. These are best when the jalapeno still has a bit of bite to it and not too soft. Serve immediately. Enjoy.
