Homemade Garlic and Herb Croutons

I had a leftover baguette that was going stale so I decided to chop it up and turn it into croutons. I seasoned them with basil olive oil, garlic, parsley, sea salt and freshly cracked pepper. They tasted so good my kids couldn't stop eating them. I made a batch of French Onion soup for dinner and I served the croutons on top with some cheese - they were fantastic! I'll be using the remaining croutons on a salad tomorrow. These couldn't be easier to make and it's a great way to use leftover stale bread.

  • 2 cups of seven grain baguette, chopped into small cubes
  • 1/2 tbsp basil olive oil
  • 2 cloves of garlic, minced finely
  • 1 tbsp fresh parsley, chopped
  • Sea salt and freshly cracked pepper, to taste
Preheat the oven to 350 degrees. Line a baking sheet with tin foil then coat it with cooking spray.

Cut the bread into small cubes. Drizzle the basil olive oil all over the bread then add the minced garlic, fresh parsley, and season with sea salt and freshly cracked pepper, to taste. Toss to coat evenly with your fingers. Pour the croutons onto the baking sheet.

Place into the oven and bake for 15-20 minutes, or until crispy and golden brown. Cool and store in an airtight container until you use. Enjoy!
