Margherita Frittata

I made this delicious frittata for breakfast recently and my husband and I both loved it. It was not only super simple to make but it tasted fantastic. I loved the combination of flavors in this dish... mozzarella, tomatoes, and basil are just meant to go together.


Margherita Frittata:

  • 8 eggs
  • 2 Tbsp non fat milk
  • 1/2 cup fresh mozzarella cheese, shredded
  • Handful of small cherry tomatoes
  • Fresh basil, chiffonade
  • Sea Salt and freshly cracked pepper, to taste

Preheat the oven to 350 degrees. Coat the baking dish with cooking spray.

Mix the eggs with the milk until well combined then season with sea salt and freshly cracked pepper, to taste. Pour the egg mixture into the baking dish then place the tomatoes, mozzarella cheese, and basil evenly in the egg mixture.

Place into the oven and bake at 350 degrees for 20 minutes, or until a tester inserted in the center comes out clean. Remove from the oven and cool for 5 minutes before cutting. Enjoy!
