Oatmeal Raisin Cookies

My son and I decided to bake oatmeal raisin cookies this afternoon. I found this recipe on Smitten Kitten and knew it would be amazing. I wanted to add walnuts or pecans but my son opted for plain oatmeal raisin cookies with extra cinnamon. The cookies turned out thick, chewy, and so delicious. My children each ate one after school and one for dessert...they both loved them.

Oatmeal Raisin Cookies:

  • 1/2 cup of unsalted butter, softened
  • 2/3 cup light brown sugar, packed
  • 1 egg
  • 1 tsp vanilla extract
  • 3/4 cup of all purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1 1/2 cups of rolled oats
  • 3/4 cup raisins

Preheat the oven to 350 degrees. Line a baking sheet with a silpat mat.

In a large bowl, cream together the butter, brown sugar, egg, and vanilla until creamy and smooth. Whisk the flour baking soda, salt, and cinnamon together in a separate bowl. Slowly add the flour mixture to the butter and sugar mixture. Stir in the oats and raisins and mix until combined.

Place dough by the spoonful onto the silpat mat. Bake in the oven for 10-12 minutes or when the cookies are golden at the edges. Let the cookies sit for a minute before moving them to a rack to cool.
