Roasted Garlic Mashed Potatoes

I love all potatoes but one of my very favorite dishes is roasted garlic mashed potatoes. They are so flavorful, creamy, and delicious. I love rich and buttery mashed potatoes but when making them at home I try to keep them a little lower in fat but still flavorful and tasty. These roasted garlic mashed potatoes are delicious and a great compliment to chicken, beef, pork, or fish. I served these potatoes with the Asian Inspired Braised Beef Short Ribs and my House Salad for a very tasty dinner that we all loved.

Roasted Garlic Mashed Potatoes:

Place potatoes in a large pot of water that has been seasoned with sea salt. Boil the potatoes for about 25 minutes, or until fork tender. Drain the potatoes in a strainer then put back in the pot. Place the milk and butter together in a microwave safe bowl and cook for 30 seconds or until the butter has melted. Pour the milk/butter mixture onto the potatoes, squeeze the roasted garlic out of it's skin and onto the potatoes then season with sea salt and freshly cracked pepper. Mash by hand or with hand mixer until light and fluffy. Taste and re-season if needed. Serve plain or with butter and extra black pepper. Enjoy!
