Oatmeal, Chocolate Chip, Craisin and Pecan Cookies

My husband and I were going out to a movie and dinner with friends. I wanted to bring a special treat to my girlfriend's mother who was babysitting all of our kids. I decided to make some tasty oatmeal cookies with dark chocolate, craisins and pecans (inspired by Bethie). The dark chocolate tasted so good with the tart craisins and I loved the crunchy pecans. I decided to use whole wheat flour to make them a bit healthier. They were a huge hit with everyone and they were so easy to make...I love that.

  • 1 stick of butter, softened
  • 1/4 cup white sugar
  • 1/2 cup of brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1/2 cup PLUS 2 tbsp of whole wheat flour
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1 1/2 cups of quick cooking oats
  • 1 cup semi sweet chocolate chips
  • 1/2 cup of craisins
  • 1/4 cup pecans, chopped
Preheat the oven to 325 degrees. In a mixer, combine the butter, white sugar and brown sugar until creamy. Mixing slowly, add the egg and the vanilla. In a separate bowl combine the flour, salt and baking soda; slowly stir the flour mixture into the creamed mixture until blended. Add the oats, chocolate chips, craisins and pecans then mix thoroughly. Drop spoonfuls onto a baking sheet lined with a silpat mat.

Place the baking sheet into the oven and bake for 12-14 minutes. Let the cookies cool on a wire rack. Enjoy.
