I am back from my trip and had an excellent time. Eight children with four women can be a bit hectic and LOUD but a good time was had by all. It was nice to get away with my dear friends and spend time with all of our children. We enjoyed playing in the tide pools, running in the surf, digging in the sand, visiting the aquarium and spending time together.
If you read my blog then you know I love roasting vegetables. This is a regular side dish in our home and I decided to make it while the evenings are still cool enough to roast in the oven. I love roasted asparagus, and roasting tomatoes brings out their sweetness while the Asiago cheese adds a natural saltiness. This is a huge hit with my entire family. It's really quick and easy to make and it tastes fantastic.
Roasted Asparagus and Grape Tomatoes with Asiago Cheese

- 5-10 asparagus spears (ends removed)
- 15-20 grape tomatoes
- 1 tbsp olive oil
- Sea salt and fresh cracked pepper to taste
- 1-2 tbsp shredded Asiago
Preheat oven to 400 degrees. Coat a glass baking dish with olive oil cooking spray. Add tomatoes, asparagus spears, olive oil, sea salt and pepper then toss to coat evenly. Top with Asiago cheese.
Roast in the oven for 5-8 minutes until asparagus is soft and tomatoes are near popping. Enjoy.
